You can automatically upload a photoURL to Google Drive each time you have a new photo uploaded on IG. *NOTE* This will only generate the URL to the photo, not the actual photo itself.

Any new photo by you

This Trigger fires every time you share any new photo on Instagram.

Then

Google Drive icon
Upload file from URL

This action will download a file at a given URL and add it to Google Drive at the path you specify. NOTE: 100 MB file size limit.
